Underneath the skin, the flesh is crisp, aqueous, and pale red or green, depending on maturity, encasing a central cavity with thin membranes and round, flat, cream-colored seeds. Red Fresno Peppers have an earthy and fruity flavor with a moderate to hot level of heat. When cooked, the peppers develop a smoky, sweet flavor.
