Ingredients
- 2 kohlrabi, peeled and thinly sliced
- 3 gala apples, peeled, cored, and thinly sliced
- ½ bunch cilantro, chopped
- ½ cup cashew halves, roasted
- 1 cup greek yogurt
- ¼ cup honey
- ¼ cup avocado oil
- 2 tablespoons curry powder
- 2 tablespoons salt
Instructions
- Whisk together Greek yogurt, honey, oil, curry powder, and salt.
- In a large mixing bowl, thoroughly toss kohlrabi and apple slices in curried yogurt.
- Allow to chill for 30-60 minutes before serving.
- Top with cilantro and cashews.
