Ingredients
- 1 large English cucumber, halved and bias sliced
- 2 watermelon radishes, peeled and thinly sliced
- 5 radishes, thinly sliced
- 1 lemon, seeded and juiced
- ¼ cup fresh mint, roughly chopped
- ¼ cup fresh dill, roughly chopped
- 1 lemon, seeded and juiced
- 1 shallot, minced
- ½ cup olive oil
- 1 tsp sea salt
- ½ tsp freshly cracked black pepper
Instructions
- In a small mixing bowl, whisk together shallot, lemon, oil, salt, and pepper. Set aside.
- In a larger bowl, combine cucumber, radishes, and fresh herbs.
- Add dressing to larger bowl and thoroughly combine. Serve immediately.
